HEALTHY VEGAN CHOCOLATE, ALMOND, DATE AND COCONUT PRALINES RECIPE
- 10 dates
- 1 small cup of desiccated coconut
- 15 almonds
- 1/2 bar of dark chocolate (the higher the cocoa percentage the better)
- 100% pure cocoa powder
- tiny drop of vanilla essence
- splash of brandy (optional of course)
This week I made a batch of lovely gooey chocolatey treats for my very lovely sister. As it is her birthday I wanted to make her something special, sadly she lives abroad so I needed to make something “postable” and this is what I came up with.
Take your dates and 5 almonds and throw them into the food processor. Blend until finely chopped. Now you can add the coconut flakes and vanilla essence. To make it extra indulgent I also like to add some brandy. Once you’ve added the flavors you like, give it another quick buzz so everything is properly mixed. Have a sneaky taste to make sure it’s prefect.
If all is well, cut your remaining almonds into halves and start forming small spheres of the mixture around them. At the end of all this you should have about 10- 12 small balls of yummyness. All you need to do now is gently heat the dark chocolate in saucepan (always keep stirring it) untill it is fully melted, switch the heat off and one-by-one roll each coconut sphere through the chocolate with a spoon. Let these cool down on some baking paper. Final touch is to roll them around in cocoa powder. Done.
